Peel and segment the grapefruit, saving the peel from one and all of the juice. Remove the pith from the reserved peel. Bring the sugar syrup to the boil and plunge in the peel; boil for about 3 minutes. Drain the peel and roll it in the sugar, then leave in a warm place to dry slightly before cutting into thin strips.
