  • 100 g (4 oz) brown lentils
  • ½ onion, spiked with 4

Method

Soak the lentils overnight in cold water. Drain, wash in cold water and Cook in salted water with the onion and bay leaf for 30 minutes, until almost tender. Drain, add the demi-glace and reduce until the taste is good.

Meanwhile, throw away the outside leaves of the cabbage and lightly cook eight dark inside leaves. Refresh and dry. Line four 7.5
