Method

To make the pastry, mix the flour, butter, sugar and lemon zest and rub until the mixture resembles breadcrumbs. Add the yolks and mix together. Rest in the refrigerator. When the consistency is hard enough, roll out thinly and cut eight biscuits with a fluted 7.5 cm (3 inch) cutter.
