  • 6 tamarillos ( per person)
  • icing sugar, for dusting

Method

To make the ice cream, pour the milk into a saucepan, split the vanilla pod and scrape the seeds into the milk, add the pod and bring to the boil. Remove from the heat and set aside to infuse for 20–30 minutes.

Whisk the egg yolks and the sugar in a large bowl. Bring the milk back to the boil, remove the vanilla pod, and pour into the egg yolk mixture, whisking continuously. Return to t
