Place the butter, egg yolks, sugar, flour and grated lemon rind in a food processor and blend until smooth. Add the milk and lemon juice, and blend. Pour into a bowl and leave for at least 1 hour.
Place the egg whites in a spotlessly clean bowl and, using an electric beater or balloon whisk, beat until stiff. With a large metal spoon, gently fold into the lemon mixture.
