Omit the cocoa powder from the filling. After adding all the filling ingredients to the apple mixture, sprinkle’ on cup yellow cornmeal, stirring it in carefully to avoid lumps. Stir almost constantly while the filling is cooking or it will stick and scorch. Cool and prepare exactly as for the grigliata, omitting the lattice top.
