  • 5 tablespoons unsalted butter
  • ¼ teaspoon


Combine the water, butter, and salt in a small saucepan. Place over medium heat and bring to a boil, making sure the butter is melted by stirring occasionally. Remove the pan from the heat and sift in the flour, all at once, stir until smooth, and return to the heat. Cook, stirring, about 30 seconds. Pour the paste into a bowl and beat in the eggs, one at a time. Use the paste immediately as di
