If you’re craving something really satisfying and wholesome, this stew really hits the spot. The cauliflower mash gives a wonderful, lighter feel but feel free to serve with potato mash, if you prefer).

Ingredients

  • 2 tbsp vegetable oil
  • 1 red onion, thinly sliced
  • 1 carrot, peeled and sliced

Method

  1. Add the oil to a large frying pan over a medium heat and sauté the onion, carrot and garlic for 5 minutes, until softened. Add the vinegar, yeast extract or miso paste, tomato purée and mushrooms and cook for 10 minutes.
