Method

Salmon skin is so tasty, sushi masters have made it a delicacy in its own right. I think it’s even better when grilled. Brush on both sides with Asian (dark) sesame oil. Season well with salt and pepper. Grill the skin directly over medium heat until crackling crisp, 10 minutes per side. Serve at once.
