We love to present this delicious salad on a plate of radicchio or butter lettuce.

Ingredients

  • 1 small head of cabbage, finely chopped
  • 2 cups finely chopped unsalted peanuts (or pecans or walnuts)<

Method

In a medium bowl mix the chopped cabbage and peanuts together and set aside. Cream the butter, mustard, sugar and flour together until a thick paste, then add the pepper and stir in the vinegar. In a double boiler heat this mixture while stirring, until very thick. Add beaten egg yolks, salt to taste, and mix thoroughly.
