Mix first 10 ingredients in a large ceramic bowl. Generously salt meat with sea salt and put in a Ziploc bag. Pour marinade into the bag and shake it to coat the meat well. Place sealed bag in large dish (in case plastic leaks) and refrigerate for 24 hours, turning bag over 2-3 times.
