Thread lamb, onions, peppers alternately onto skewers. Place in large Ziploc bag. Mix together the olive oil, coconut milk, lime juice, cilantro, crushed red pepper, cumin, sea salt and garlic, and pour into bag over lamb skewers; seal bag. Marinate in refrigerator for 4-6 hours, turning occasionally; remove meat and drain. Reserve marinade and place in large saucepan and boil for 10 minutes. R
