Mt. Adams Huckleberry Sauce

After a long day in the cold rain, picking fresh huckleberries on the side of Mt. Adams, we vowed that the day would not be wasted and developed this recipe to go with game, pork, and turkey. Very hard to get, the huckleberry is worth the trouble, as its strong flavor, crisp bite, and luxuriant color enhances even the plainest meat dish.
