If you wish for less of an explosive effect, or more easily digestible beans, throw 2-3 full stalks of celery in the beans while they simmer in the water. Discard the celery stalks when the beans are cooked, before you add to the sausage, tomato sauce, etc.

Ingredients

  • 1 pound dried kidney or red beans
  • ½ pound pork sausage, from butcher, not commercially packaged

Method

Wash the beans and soak them overnight in a large pot of cold water. Place pot on high heat and bring the beans and soaking water to a rolling boil, then cover, add celery stalks to pot (burying them in the mixture) and reduce heat to simmer and continue cooking for 1 ½ hours. Drain the beans and reserve, discarding the water.
