A sweet wonderful woman who could cook up a gourmet meal out of the simplest fare, and who happens to be the author’s mother, God rest her gentle soul. I hated sweet potatoes until she cooked them this way ... now I use her recipe at least once a month, year round.

Ingredients

  • 2 pounds sweet potatoes, peeled and cut into ½-inch slices lengthwise

Method

In a large pot, boil 6 cups of water and drop potato slices in, and boil for 2-3 minutes, then drain and pat dry.

Combine mustard, olive oil, butter, and rosemary, in a medium bowl, mix evenly, and brush on both sides of the sweet potato slices. Reserve the rest of the mix for basting. Grill slices on oiled rack over medium-high heat (450° to 550°) for 5 minutes or until fork-tender, tu
