This sauce is super on chicken, fish or grilled sausages.
In a medium saucepan, over medium heat, sauté the garlic and onion in safflower oil for 3-4 minutes until garlic starts to brown. Put the tomatoes into a food processor and blend until smooth. Add the remaining ingredients, then pour the mixture into the pan with the garlic, and onion. Simmer, uncovered, on very low heat for 15-20 minutes.
