It’s said this is also good as a sauce on as a sauce on vegetables: cauliflower, asparagus or boiled potatoes.

Ingredients

  • 6 sprigs fresh rosemary
  • 1 cup tarragon vinegar
  • 6 tablespoon

Method

Whisk all ingredients together in a medium bowl. Use this as a marinade for beef, chicken, lamb, pork (shoulder is wonderful in this marinade), or firm fish steaks Marinate at least 6 hours or, preferably, overnight.
