For a non-vegetarian I was shocked at how good these are. They take a while to make but the flavors are wonderful together and they’re as healthy as you can get. Garnish these with tomato, avocado, red onion or dill pickle slices

Ingredients

  • 12 oz. seitan
  • 1 tablespoon olive oil
  • 4 medium shal

Method

Drain seitan, squeezing to remove excess liquid, then roughly chop, this amount should make 2 cups. Process the seitan in a food blender until it resembles large-grind hamburger, which should be accomplished in several short pulses.
