Chop the cilantro to make ½ cup and set aside 1 tablespoon of it for salsa. In a medium-sized baking dish, combine the chopped cilantro and the stock, lemon juice, red pepper, ginger, sugar, molasses, garlic, and black pepper. Stir and add the tofu. Marinate it for 2 hours at room temperature.
