  • 2 packages ostrich filet mignons * (or 2-inch thick Emu steaks)

Method

In a large flat pan cover ostrich filet mignons with ginger, garlic, salt and pepper. Squeeze fresh limes over the top and let filets stand for 1 hour at room temperature. Remove filets from marinade and discard liquid.

Grill filets over medium high heat (450° to 550°) for 8 min
