Grate the chocolate into a medium stainless steel mixing bowl. Add the cream and stir.
Place the bowl in smoker and smoke at 220° for 30 minutes. Stir the mixture every 15 minutes. For a heavier smoke flavor increase the smoking time by 15 minutes.
