Like chickpea pancakes, this recipe is as simple as combining chickpea flour, water, and salt. Only the process is different: cook into a porridge and set it before cutting and frying.

Ingredients

  • ½ tsp salt, plus more for sprinkling
  • 1 cup [120 g] chickpea flour

Method

In a medium pot, bring 2 cups [500 ml] of water and the salt to a boil. Whisking continually, stream in the chickpea flour and cook until thickened, about 3 minutes.

Line a baking sheet with plastic wrap or parchment paper and spread the porridge evenly over it. Refrigerate until cold and firm.

Flip the mass out onto a cutting board, discarding the plastic wrap or parchment, and
