As with every great risotto, to prepare this traditional Northern Italian recipe, the key is to select good quality ingredients, starting with the rice. Proudly humble products like arborio rice from Riso Gallo and pumpkin come together with rich creamy gorgonzola cheese to create this extremely oozy and sumptuous dish. The aromatic note of sage and the acidity of white wine gives the risotto a beautiful depth of flavour. This dish is a fantastic vegetarian option, always a must in all my buffet and gala menus from September to the end of the festive season.
