This is a quick and easy summer salad, without lettuce or other cool-weather crops. The seasoning is simple, so it highlights the flavors of fresh produce.

Ingredients

  • 2–4 cucumbers, sliced
  • 3 tomatoes, cut into wedges
  • 1 small onion, cut into rings

Method

Wash the vegetables thoroughly. Cut the cucumber, tomatoes, and onion as indicated, and place in a bowl. Add the vinegar, oil, salt, and pepper. Combine, then chill or serve immediately.
