  • 1 pound dried black-eyed peas (any field peas or cowpeas will do)
  • 3 pieces smoked pork neck bone

Method

Empty the peas into a bowl, pick out any bad ones, add water, and soak for 30 to 60 minutes. Wash all the meat well and boil in a medium-large pot for 20 to 30 minutes, then drain. Leaving the meat inside, refill the pot two-thirds full with water and bring to a boil again. Drain the peas and wash again. Add the peas and onion to the meat in the pot.
