  • 5–6 large (or 10–12 small) yellow summer squash
  • 3 strips bacon
  • 1 medium

Method

Wash the squash well, then cut crossways into quarter-inch-thick round pieces. Fry the bacon strips in a skillet, then remove, leaving the grease. Add the squash and onion to the grease and Stir-fry over medium heat until they start to brown. Add the bacon strips and hot water, then salt and pepper to taste as the mixture simmers 10 to 15 minutes. Serve as a Side dish with whatever you like.
