  • 4–6 fresh pigs– feet, split and cleaned
  • 1 large onion, chopped
  • 1 medium green bell pepper, chopped

Method

Clean the pigs’ feet by scraping with a paring knife under running water. Add to a medium pot two-thirds filled with water and boil 10 to 15 minutes. Drain and rinse with cold water. Return the pigs’ feet to the pot, fill the pot halfway with warm water (4 to 6 cups), and add the onion, bell pepper, celery, salt and pepper.
