  • 1 rabbit, cleaned and cut up
  • sprinkle salt and black pepper

Wash the rabbit pieces, pat dry, and sprinkle lightly with salt and pepper. While the oil heats in a medium skillet, put the rabbit pieces in a bag (paper or plastic) with the flour and shake to coat; remove the pieces from the bag and shake off excess flour. Test the oil temperature with a dab of flour, which should brown rather than burn when dropped into the hot oil.
