  • 1 raccoon, skinned, cleaned, and cut into pieces
  • sprinkle salt and black pepper
  • sprinkle garlic powder


Remove any excess fat from the coon pieces, then wash, pat dry, and sprinkle lightly with salt, pepper, and garlic powder, while the fatback fries in a large pot. Add the coon pieces to the hot grease and Stir-fry 5 minutes or longer, until browned. Add the onion, bell pepper, and water.
