Fry the sausage or bacon in a medium skillet. When done, remove, set aside, and Stir-fry the onion in the grease until clear. Drain the grease, slice the sausage into pieces, and place all of the ingredients in the skillet. Cover and simmer 15 to 20 minutes. Serve over rice or stiff grits.
