Add the ham to the oil in a medium skillet and brown on both sides. Drain the oil, add the tomatoes, onion, and water, and season to taste with salt and pepper. Cover and simmer 15 to 20 minutes. Serve over rice, stiff grits, or most any kind of potatoes.
