Chewy, toasted oats in the batter make these muffins moist and tender. I love the surprise of breaking open a muffin and discovering plump, bright pink raspberries inside. I like to sprinkle these with a crunchy nut topping, but they are also delicious without. I find it works best to line the cups with papers.
