In India, Hakkas call sweet soy sauce hung mee, which translates to “red sauce.” The name doesn’t seem to fit, since in reality the sauce isn’t red, but brownish-black. No one I met could explain the origin of its name. Name issue aside, it is one of those magic ingredients that instantly transforms the ordinary into the extraordinary.
