Beaten eggs bind a web of salty-sweet radish strips and sliced green onions to create a golden pancake, similar to a frittata. The chewy dried radish (also called Chinese turnip) lends an earthy substance to the eggs. Eat this dish with rice for a fast, homespun meal.

Ingredients

  • cup sweet or salted radish strips (see note)
  • 2 large eggs

Method

  1. Rinse the radish strips. If they are too salty for your taste, cover them with water and soak for 5 to 15 minutes, then drain and squeeze out excess water.
  2. In a small bowl, lightly beat the eggs and water to blend.
