The chef at Jiangxi Guild House fried local mushrooms in a light coating of egg and flour to make fritters. He offered a roasted salt with numbing Sichuan peppercorns and a touch of aromatic five-spice powder as a dip. Choose a selection of mushrooms for an interesting variety, from crisp, craggy enoki fritters to meaty, succulent king oyster slices. The fried mushrooms can be held in a warm oven for about 30 minutes.
