We tasted thin, browned, frittata-like fried eggs throughout Asia and America. This straightforward version is heavily laced with bits of garlic chives. It’s my fallback choice for a quick emergency meal.


  • 2 large eggs
  • 1 tablespoon water
  • teaspoon salt


  1. In a small bowl, lightly beat the eggs, water, and salt to blend.
  2. Set a 6-inch frying pan over high heat. When the pan is hot, after about 1 minute, add 1 tablespoon of the oil and rotate the pan to spread. Add the chives and Stir-fry just until slightly wilted and bright green, about 30 seconds. Scoop out the chives and stir into the eggs.
