Bits of crisp fried garlic adorn rounds of silky white-fleshed squash. Look for the long, slender angled loofah (also known as sponge squash) at farmers’ markets and Asian grocery stores. You can identify the long squash by its dull, rough green skin and protruding vertical ridges. The clean, cool, refreshing quality of the fresh loofah squash is a perfect base for the crunchy topping of toasty garlic.
