Chicken symbolizes wealth to the Chinese. It’s more highly prized than pork and is often served for festive events or to special guests. May (Yu-Hsin) Chang tells a story to illustrate this point. An eighty-year-old grandmother invented this dish using common pork to resemble coveted chicken. She molded a typical Hakka mixture of ground pork and fish paste around pork spareribs, and then steamed and deep-fried them so that they resembled fried chicken drumsticks.
