Pig’s feet, also known as trotters, turn dark and glossy when braised in sweetened black vinegar and ginger. This lush transformation of a humble cut of pork is commonly served to new mothers to replenish their bodies after childbirth. But its fans extend far beyond new mothers. It’s pure comfort to suck the tangy-sweet meat off the bones of these soft and velvety braised feet. Amy Wong’s version uses palm sugar, common in her home in Malaysia, but brown sugar works as well.
