Stir-fried meat and vegetables are a basic component of the Hakka diet. The flavors are direct and natural, with no sauce added. This version combines water spinach—a hollow-stemmed green with long, pointed leaves—and beef. The thinly sliced marinated meat and spinach are stir-fried separately, and then mixed together.

Beef

  • 8 ounces beef flank steak
  • 2 teaspoons soy sauce
  • 1

Method

For the Beef

  1. Cut the beef across the grain into slices ⅛inch thick, 2 to 3inches long, and ½ inch wide. In a small bowl, mix the beef with the soy sauce, cornstarch, oil, and white pepper.

For the Stir-fry

  1. Remove and discard any yellow or wilted
