Most people consider the asparagus tip to be the best part, yet both our girls at first would only eat the bottoms. The fact is that the bottom is the sweetest part, but for it to be edible, the tough outer layer must be removed. After cutting off the woody bottom of the asparagus spear, I always peel the remaining bottom third, removing any tough skin and leaving only the tender, sweet flesh.
