The first time I made this dish, I didn’t check the pan often enough, and the vegetables almost burned when all the liquid evaporated. It came out very tasty, however, and our daughter Gabriella loved it. She named it “burned leeks and peas” and declared it one of her favorite vegetable dishes. I try to re-create that “almost burned” effect whenever I make the dish now, though Gabriella’s assessment is often “not quite burned enough.”
