This is another of the gems from my mother’s fifty-six-year-old notebook of my grandmother’s recipes. It may sound similar to the previous recipe I’ve named “Italian Latkes,” but it is actually quite different. These delectable fritters are made with fully cooked mashed potatoes, so they are crispy on the outside and creamy on the inside. To create that wonderful contrast in textures, you must fry them until they are well browned.
