  • 3 heads Belgian endive
  • 2 heads red radicchio
  • Salt


  1. Heat a charcoal or gas grill.
  2. Cut the Belgian endive in half lengthwise, make a cut at the root end, and place on the grill with the cut side facing the fire. Do the same with the radicchio, except that it should be cut in quarters. Turn the endive and radicchio over when they are lightly charred. Season with salt and drizzle generously with olive oil.
