  • 3 small to medium zucchini
  • 2 tablespoons extra-virgin olive oil
  • Salt


  1. Heat a charcoal or gas grill.
  2. Remove the ends of the zucchini and cut lengthwise into ¼-inch-thick slices. Brush with some olive oil and season with salt. Place on the grill and cook until tender and lightly charred on both sides, 3 to 5 minutes on each side, then transfer to a serving platter and drizzle a little more olive oil over them.
