Piedmont is the land of cold and foggy winters, hence the name of the noble grape, Nebbiolo — from nebbia, the Italian word for “fog" — that is used to make the famous Barolo and Barbaresco wines. In Italy I find that the foods of a particular region seem to be particularly well paired to the wines of the region. This soup is a perfect example.
