This is the rice my mother’s mother, Nonna Mary, used to make. She called it riso pilaf, but unlike most rice pilaf recipes, this is a plain white rice. It cooks in the oven and comes out perfectly every time. You’ll need a pot that can go from the stovetop to the oven. Enameled cast iron is an ideal choice.

Time from start to finish: 30 minutes


  • 1 tablespoon butter
  • 1 cup White rice
  • cups water
  • ½ teaspoon salt


  1. Preheat the oven to 350°F on the bake setting.
  2. Put the butter in a ½-quart ovenproof pot over medium-high heat. When the butter has melted, add the rice and stir until it is well coated. Add the water and salt.
  3. When the water begins to bubble, cover the pot and place in the oven. Bake for 20 minutes. Remove from the oven and let stand, covered, for 2 to 3 minutes before serving.
