This is the rice my mother’s mother, Nonna Mary, used to make. She called it riso pilaf, but unlike most rice pilaf recipes, this is a plain white rice. It cooks in the oven and comes out perfectly every time. You’ll need a pot that can go from the stovetop to the oven. Enameled cast iron is an ideal choice.
