Sbrisolona is actually a dialect word that corresponds to sbriciolona in Italian, which in turn means “crumbly.” And that describes this cake perfectly, because it is made from crumbly dough that is baked together. When it is served, it is broken into irregular pieces and sometimes dunked in grappa or sweet wine. For breakfast, its great dunked into your caffèlotte.
