Chicken on its own has a mild neutral flavour that can easily be enhanced. In this dish, done Peruvian style, a half chicken is marinaded in soy, sugar and spices before being blackened into a taste explosion. Hospital food doesn’t need to be bland. It can be adventurous and thrilling too.
