Who doesn’t like a home-made chocolate cookie? When these are made in the kitchen they are a proper treat and they bring a smile to everyone’s face. A bit of feel good factor is important during the day and it shows the kitchen is capable of more than just mass catering. Patients respond well to this.
Mid-morning, late afternoon biscuits to go with your cup of tea, use white or milk chocolate for variety.

Nearly 500 calories per biscuit is a quarter of my daily need if I don't want to get fat (OK - fatter!). I made the dough into 3 "sausages" froze 2 for future use, chilled the 3rd and made it into 10 excellent biscuits.
Too many chocolate baked goods just use cocoa powder and not enough so its brown but not much taste of chocolate. This recipe gets it right with loads of real chocolate.
I used 70% strength chocolate but some may prefer a sweeter dough.
A couple of other observations:
Why specify gluten free baking powder in a recipe that uses normal wheat flour?
To me demerara sugar (specified in ingredients) means brown with crystals a bit bigger than white granulated, used in baking to give a bit of crunch. The instructions don't mention demerara but do call for soft brown.
Finally "Weigh 1kg of this mix and…" why not use it all?
